My Quinoa Salad with Spinach

  • 1 Tbsp olive oil
  • 1/4 cup onion
  • 2 garlic cloves, minced
  • 1 cup quinoa
  • 2 cups veggie stock
  • 1 avocado, cut into bit sized pieces
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup chopped fresh spinach
  • 2 Tbsp chopped fresh basil
  • pinch of salt


Warm oil in a saucepan over medium heat. Saute garlic and onion until onion is golden brown, 3 to 5 minutes. Add quinoa, stirring constantly, 4 minutes. Add veggie stock and cover and simmer 20 minutes. Remove from heat, let stand for 5 minutes. Serve fluffed with a fork and toss with spinach, avocado, tomatoes, basil, and lightly salt to taste.
